Everyone in our house loves quesadillas because they’re fun to eat, full of bright flavours and really filling. If I’m making one just for myself I’ll use a frying pan but when I’m making enough for everyone I use this method to make Quesadilla Pockets because it’s SO much easier. The great thing is, everyone can choose their own fillings before they go into the oven then it’s all served on the table with guacamole, tortilla chips and extra salsa.

There are no hard and fast rules for the filling but you’ll need some cheese to keep everything together and you must oil the pan then either spray or brush oil onto the top of the tortillas before they go in the oven.

INGREDIENTS
Feeds 4 People
500g minced pork or beef
100g grated mozzarella cheese
6 large flour tortillas cut in half
1 tsp cumin
1/2 tsp paprika
1/2 tsp oregano
1/2 tsp garlic granules
1/4 tsp salt
lime
spray oil

Filling Ideas
tinned corn
red pepper
salsa
black beans
spring onion
pickled jalepenos

  • Mix the herbs, spices and salt into the meat then spoon a couple of tablespoons of the mixture onto a third of the halved tortillas.
  • Top with cheese and whatever other ingredients you choose. A squeeze of lime over the top will brighten up all the ingredients.
  • Fold the tortilla over one third and place more cheese on the final third then fold again into a triangle.
  • Pre-heat the oven to 200°C Fan.
  • Oil a large oven-proof frying pan and place the pockets into the pan as you make each one.
  • Brush or spray the tops of the tortillas with a little oil so that it browns in the oven.
  • You’ll need two frying pans to arrange 12 pockets. Once the pan is full give all the pockets a firm press to ensure they stay in tact.
  • Place the pans into the oven and cook for 10-15 minutes until the cheese has melted and the tortillas are light golden brown.
