I absolutely love bagels for dinner and won’t listen to any ‘they don’t count as a proper meal’ kind of nonsense! In no time at all you can load up bagels with lots of delicious and nutritious ingredients which has saved my sanity on more than one occasion. Stilton and walnuts are a classic combination that work beautifully as a bagel topping so this combo turns up a lot on our dinner menu.

I love the texture of the walnuts in the cheese spread

INGREDIENTS
per whole bagel
bagel
100g cream cheese
100g stilton (or any blue cheese)
1 tsp honey
2 tbsp walnuts
good quality oil
balsamic glaze
prosciutto
rocket

  • Halve and toast the bagel. Add the cheeses, honey and a drizzle of oil to a bowl and mix with a fork until combined then fold in chopped walnuts.
  • Spread onto the bagel halves then drizzle with balsamic glaze, top with prosciutto and finish with rocket, an extra drizzle of oil and some finely chopped walnuts.
