I’m a sucker for a hot sandwich and the most important basic to get right is cheese on toast. Cheese on toast is the purest hot sandwich with a spoonful of Branston pickle or hot masala chutney on the side for some pow. If I have a few slices of bread that are going stale I use them to make this easy lunch and I can make it more substantial by adding ham or tuna before pouring over the cheese mixture.

INGREDIENTS
Makes 2 Slices

2 slices of any bread
60g cheddar or red Leicester
2 eggs
40ml milk
optional: 2 tsps Worcestershire sauce

  • Separate the egg yolks from the egg whites. *Keep the egg whites in a plastic container in the freezer. Grate the cheese into the bowl with the egg yolks then pour over the milk and the Worcestershire sauce (if you’re using it, don’t worry if you don’t have it). Give everything a mix using a fork.
  • Toast the bread on a low setting in a toaster then place on a grill tray. Divide the cheese mixture between the slices then pour the liquid over the top of each slice.
  • Preheat the grill to 175°c then grill the cheese for 2 and a half minutes. Keep an eye on it. The top will melt and caramelize to gooey perfection! If you want a more substantial meal you can put some ham, or tuna or vegetables on the toast before you pour over the cheese mixture.
