If you’re looking for a quick and delicious side dish then pak choi cooks really quickly and has such a great texture. I add julienne strips of carrot and the combination is so good! The salty, umami sauce is incredibly easy and you don’t need much. A sprinkling of sesame seeds at the end adds some crunch and nutrition. I serve this quick and easy side dish with pan fried salmon and fluffy white rice.

I love how quickly this dish comes together with big flavour.

INGREDIENTS
2 pak choi
2 small carrots or 1 large
a little salt
sesame seeds

for the sauce
1 tsp vegetable oil
1 tsp sesame oil
2 tsp light soy sauce
1 tsp prepared garlic (or 1 crushed clove)

  • Cut the pak choi in half lengthways and wash. Use a julienne grater to create strips of carrot (discard when you get to the core of the carrot).
  • Mix together the oils, soy and garlic then spoon on the cut side of the pak choi.
  • Heat a large frying pan on a medium high heat then place the pak choi in cut side down.
  • After a few minutes, add the carrots and grind over a little salt. Add a lid and cook for a few minutes until the carrots are hot.
  • Sprinkle over with sesame seeds and serve with the pan juices.
