Familiar and comforting weeknight meals do not having to be boring and I think this easy and elegant jacket potato is the best proof. The contrast between the warm, cheesy potato and the vibrant freshness of the salmon and lemon is wonderful. I defy anyone to say this isn’t an elegant dish but it’s rooted in the comfort and convenience of a weeknight meal. It’s ridiculously delicious and I love it.

As soon as the chive flowers appear in my garden I rush to use them – smoked salmon sings with chive flowers

INGREDIENTS
baking potatoes
olive oil
smoked salmon – as much as you like
100g cream cheese per large potato
fresh chives
lemon
sea salt
pepper

  • Pierce the spuds with a short, sharp knife. Rub over with olive oil and a little salt then bake at 180°C Fan for 1 hour and 15 minutes.
  • Cool slightly then slice open and scoop out most of the potato into a bowl. Add the cream cheese, chopped chives and a sprinkle of sea salt then mix to combine.
  • Fill the jacket with the cheese mixture then top with smoked salmon, squeeze over with fresh lemon juice, grind over with salt and pepper then finish with chive flowers if you have them.
