Sweet and Sour Pork is an all round family dish that’s easy to make at home. It’s generally considered a children’s dish in Chinese cuisine because it’s sweet, sticky and easy to eat. Homemade Sweet and Sour Sauce can be kept in the fridge for just over a week so I often make a batch of meatballs with S&S dipping sauce on a Friday then whip up S&S Pork on the Monday after we’ve had roast pork for Sunday lunch.

INGREDIENTS
Serves 2 Adults and 2 Kids

400g pork fillet or cooked pork
200g pineapple
spring onion
1/2 tsp salt
1 tbsp vegetable oil
75ml pineapple juice
The Sauce
100ml cider vinegar
120g brown sugar
75ml water
75g ketchup
1 tbsp cornflour
1 tbsp soy sauce

  • Cut the pork into bite-sized pieces. Slice the pineapple and spring onion into pieces smaller than the pork. Heat the oil in a large frying pan on a medium high heat then add the pork and evenly sprinkle over the salt. Turn the pork to colour on 2 sides, about 2-3 minutes each side.
  • Whilst the pork cooks put all the ingredients for the sauce into a small frying pan on a medium high heat and whisk until the sauce thickens (about 2 minutes).
  • Pour the sauce over the pork, add the pineapple and juice then cook on a medium heat for a couple of minutes until the pork is cooked through.
  • Sprinkle with the chopped spring onion and serve with rice.
