This is one of my favourite breakfasts. It’s bright, fresh and makes you feel good. Huevos Rancheros is a very simple salsa served with fried eggs and cheese scooped up with tortillas. I love making tortillas and I’m lucky enough to have a tortilla press but you can make your own tortillas with just a heavy saucepan. The flour you need is called masa (ground up flint corn) and can be bought online or from an international grocer. It’s gluten free, costs about £4-5 and makes over a hundred tortillas.

INGREDIENTS
Serves 2 Adults & 2 Kids
4 Large Free Range Eggs
130g masa flour
180ml warm water
1 avocado
1 lime
tomatoes
shallot
coriander
4 tbsp black beans
2 radishes
60g feta
veg oil
salt and pepper

  • Put the masa in a bowl with a small pinch of salt and pour over the warm water then mix with your fingers until you have a dough. Cut the dough in half then roll each half and cut into 4 equal parts then roll each part so you have 8 balls of dough.
  • Put a piece of greaseproof paper under and on top of a ball of dough then put in a tortilla press or get a big, heavy pan and press down really hard until you have a tortilla about the size of a saucer. Re-use the greaseproof paper to make all the tortillas. Cook the tortillas in a dry saucepan (no oil) on a medium high heat for 2-3 minutes each side. Keep the cooked tortillas warm in a clean tea towel.
  • Finely chop equal amounts of shallot, tomato and coriander and put them all in a bowl then squeeze over half a lime and add a generous pinch of salt. Stir then let the salsa sit. Put some veg oil in a pan then fry the eggs. Put the black beans in a corner of the pan too.
  • Halve the avocado and remove the pit then scoop the flesh out of the skin using a spoon and put both halves in a small bowl. Squeeze over the other half of the lime and grind over some salt then slice lengthways into thin slices. Dish up each plate with an egg, two tortillas, some salsa, a sprinkling of black beans, some slices of radish and avocado then crumble over some feta.
