My kids love eating sushi but we don’t live somewhere where it’s readily available. Where we can get it the cost is eye-watering so I make a lot of homemade sushi to satisfy both tummies and wallets. The crux of my homemade sushi is good rice. It’s not complicated and the seasonings are readily available in most supermarkets. I tend to make the sushi rice in the morning so that it’s completely chilled by the time I come to make sushi that evening.

INGREDIENTS
Serves 2 Adults & 2 Kids
240g sushi rice
400ml water
50ml vinegar (either rice wine or apple cider)
1 tbsp sugar
1/2 tsp salt
1 tsp vegetable oil




- Wash the rice twice in a sieve then put into a small saucepan and cover with 400ml of clean water. Bring to the boil then immediately reduce the heat to low and put a lid on the pan. Cook for 15 minutes then turn off the heat and allow the rice to rest for 10 minutes.
- In another small saucepan (or in the microwave in a heatproof bowl) add the oil, vinegar, salt and sugar then heat until the sugar is dissolved.
- Once the rice is rested fluff it with a fork then pour over the liquid and stir then let it absorb for 5 minutes before shaping.
