Fresh artichokes are hard to find and a bit of a faff to prepare but you can buy jarred or tinned artichokes in most supermarkets. Jarred artichokes are packed in oil and full of flavour which is ideal for this recipe. This salad has a distinctly French feel to it so it’s only fitting that you serve it with a rustic loaf of bread and good butter. As with all my favourite salads this is a satisfying meal all on its own.

INGREDIENTS
Serves 2 Adults
5 radishes
150g jarred artichokes
2 slices prosciutto crudo
salad leaves (I use leaf lettuce)
for the dressing
1 tbsp red wine vinegar
1/4 tsp salt, level not heaping
1/4 tsp sugar, level not heaping


- Put the vinegar, salt and sugar into a jar and shake to combine. Thinly slice the radishes, discarding the tops and bottoms then place in a bowl and pour over the dressing.
- Cut the artichokes into bite-sized pieces and tear the ham into similar sized pieces then arrange on a plate along with salad leaves. Scatter over the radishes then spoon the dressing over the whole salad.
- Serve with slices of rustic bread and good butter.
