We eat a lot of noodle dishes in our house but I often make recipes that are too spicy or complex for the kids’ palates so I make them a kid-friendly version. This kid-friendly noodle dish is tasty enough for grown-ups too and you can jazz it up with some hot sauce and fresh herbs. It’s a great way to use up some leftover roast chicken for a quick Monday night dinner. My two love their children’s chop sticks which help them get used to using the real thing.

INGREDIENTS
2 Kids
150g cooked chicken
approx. 60g dried egg noodles
1 tsp vegetable oil
for the dressing
1 tbsp light soy sauce
1 tbsp honey
1 tsp sesame oil
tiny pinch of chilli flakes
1/2 lemon

optional extras
sesame seeds
chilli slices
spring onion slices
coriander leaves

  • Put a small pan of salted water on to boil. Chop the chicken into bite-sized pieces. Heat the vegetable oil in a medium sized frying pan on a medium-high heat. Add the chicken to the pan and the noodles to the boiling water. The noodles should take about 3-4 minutes to cook at which point they need to be drained and added to the frying pan.
  • Whilst the noodles are cooking put the sesame oil, soy sauce, honey, chilli flakes and the juice of the lemon into a bowl then whisk together. Pour the dressing over the chicken and noodles in the frying pan and toss everything together over the heat for a minute or two then serve.
